Cooking on the Edge: Strawberry Mango Coolers

With summer in full swing, the heat is on, but you can cool down with these fruity drink recipes that are sure to please on those hot summer days and nights.

Ingredients

2 cups mango
½ cup strawberries
1 ½ cups ice
¼ cup sugar
2 tbsp. lime juice

For Garnish (optional)

2 whole strawberries
2 parasol picks

Directions

In a blender, combine the first 5 ingredients. Cover and blend until smooth. To garnish, cut a ½ inch slit into the tip of a strawberry and position strawberry on the rim of the glass. Add parasol pick, positioning over strawberry.

Yield: 2 servings

For a twist, replace the ½ cup of strawberries with 1 cup watermelon for a watermelon mango cooler. Or try replacing the strawberries with blackberries for a blackberry mango cooler. Garnish either of these drinks with lime slices rather than whole strawberries.

So whether you want to please a crowd or just have a special evening for two, beat the heat with these cool summer drinks.
