Cooking on the Edge: Sweet Apple Chicken Alfredo

This sweet, savory dish is sure to be the hit of any party or get together. In this week’s recipe, I combine the sweet crispness of Gala apples with the creamy, rich flavor of homemade Alfredo sauce for an unforgettable, melt-in-your-mouth flavor.

Ingredients (serves 4):

¼ cup sweet butter
2 tablespoons olive oil
2 cups heavy whipping cream
2 cloves garlic, minced
1/4 teaspoon white pepper
1/2 cup grated Parmesan cheese
3/4 cup shredded mozzarella cheese
Dash of oregano
1 (12 ounce) package angel hair pasta
1 Gala Apple
2 Chicken Breasts
Garlic Bread (optional)

 Directions

Melt butter with olive oil in a saucepan over medium heat. Add cream, garlic and white pepper; bring to a low boil and simmer for 5 minutes

Slice chicken breasts into thin strips and grill in medium skillet over medium heat. Peel and finely dice apples and add to skillet when chicken is nearly cooked. Bring to low heat and simmer for 1 ½ minutes.

Stir Parmesan cheese into cream mixture and simmer until sauce is thickened and smooth, 8 to 10 minutes. Add mozzarella cheese to sauce; cook and stir until cheese is melted, about 5 minutes.

Bring a large pot of lightly salted water to a boil. Cook fettuccini in the boiling water, stirring occasionally until al dente, 3 to 5 minutes. Drain and transfer pasta to serving plates.

Spoon sauce over pasta and add apples and chicken. Serve with garlic bread.
